STORY BEHIND THE DISH:
Orene made this cake when we (the Alfred Wiemers family) visited Orene and Merlin when they lived in Corpus Christi. We made it many times after that.

| Dinette Cake: | |
| 1
cup sugar |
1 tsp vanilla |
| 1/3 cup vegetable shortening | 1-1/2 cup flour |
| 2 eggs, unbeaten | 2 tsp baking powder |
| 2/3 cup milk | 1 tsp salt |
| Coconut Frosting: | |
| 6 Tbl butter, melted | 1 cup moist shredded coconut |
| 2/3 cup brown sugar | 1/2 tsp vanilla |
| 1/4
cup cream (or evaporated milk) |

DIRECTIONS:
Cake: Cream sugar and shortening. Add eggs, milk, vanilla, flour, baking powder, and salt. Mix. Bake in a 9 x 9 x 2 greased pan. Frost with coconut frosting.
Frosting: Combine ingredients. Spread over baked cake and place pan under the broiler for just a few minutes until bubbly. Be careful because it will burn easily.
