STORY BEHIND THE DISH:

Orene made this cake when we (the Alfred Wiemers family) visited Orene and Merlin when they lived in Corpus Christi. We made it many times after that.


INGREDIENTS:
Dinette Cake:  
1 cup sugar
1 tsp vanilla
1/3 cup vegetable shortening 1-1/2 cup flour
2 eggs, unbeaten 2 tsp baking powder
2/3 cup milk 1 tsp salt
   
Coconut Frosting:  
6 Tbl butter, melted 1 cup moist shredded coconut
2/3 cup brown sugar 1/2 tsp vanilla
1/4 cup cream (or evaporated milk)

DIRECTIONS:

Cake: Cream sugar and shortening. Add eggs, milk, vanilla, flour, baking powder, and salt. Mix. Bake in a 9 x 9 x 2 greased pan. Frost with coconut frosting.

Frosting: Combine ingredients. Spread over baked cake and place pan under the broiler for just a few minutes until bubbly. Be careful because it will burn easily.
