STORY BEHIND THE DISH:
Mother taught me how to make this and I made if often for Ray while we were dating.
| INGREDIENTS: | |
| 1 lb hamburger | salt & pepper |
| 4 - 6 zucchini squash, sliced approx 1/4" thick | cumin (optional) |
| 1 onion, large, chopped | chili powder (optional) |
| 1 tsp chopped garlic | 1 bag Fritos corn chips |
| 1 large can tomatoes, diced or crushed | 8 oz cheddar cheese, grated (vary amount to taste) |
| 1 small can Rotel tomatoes, or regular tomatoes | |
DIRECTIONS:
Brown hamburger meat. Add squash, onion, garlic, and tomatoes. Add 1 - 2 small cans of water. Season with salt & pepper. Spices, i.e. cumin & chili powder, can be added to taste. Bring to a boil, then lower heat & simmer 30 - 45 min until squash are tender.
To serve, place corn chips in individual bowls and sprinkle with cheese. Pour hot squash mixture over chips. Cheese melts easily. For a healthier meal, omit the corn chips. Amounts can be adjusted to make larger or smaller quantities.
