STORY BEHIND THE DISH:
Unlike other divinity recipes, this may be made even if it is raining. This recipe came from an old Medina County Home Demonstration Cook Book. I make this at Christmas time.
| INGREDIENTS: | |
| Mixture One: | |
| 3 cups sugar | 1 cup white corn syrup |
| 3/4 cup water | 3 egg whites, beaten stiff |
| Mixture Two: | |
| 1 cup sugar | 1 tsp vanilla |
| 1/2 cup water | 1 cup coarsely chopped pecans |
DIRECTIONS:
Mixture One: Cook sugar, water, and syrup untill it forms a hard ball (250 deg F), stirring until sugar dissolves. Remove from heat. Pour slowly, with constant beating over the beaten egg whites.
Mixture Two: Cook sugar and water to hard ball stage (265 deg F). Pour into Mixture One. Continue beating until candy begins to hold its shape, then add vanilla and pecans. Pour into greased pans. Cut when cold. May also be dropped onto greased paper. Must work fast!
