STORY BEHIND THE DISH:

 


INGREDIENTS:
16 oz pkg macaroni, cook in 4 qts water w/ 1 tsp salt
1 medium green pepper
1/4 cup lemon juice
1 small onion, diced
salt & pepper to taste
4 medium tomatoes, diced
1-1/2 cup Hellman's Real Mayonnaise

DIRECTIONS:

Cook macaroni in 4 quarts of water w/ 1 tsp salt until well done. Drain in colander & rinse well w/ cold water until cool. Add lemon juice and salt & pepper to taste. Add mayonnaise. Mix well. Add green pepper, seeded, membrane & skin removed then chopped. Add diced onion. Add diced tomatoes. Mix well & refrigerate overnight. If too thick the next day, add a little milk and check seasoning. Serves 10-12.

In later years, Aunt Irene didn't put in the green pepper and onions as they couldn't eat them.
