STORY BEHIND THE DISH:

These rolls were always enjoyed by family and friends, and Mother shared the recipe with Meyer Elementary School when she worked there in the Cafeteria Kitchen. The days that these rolls were on the menu, her grandchildren, students, teachers, and staff all looked forward to eating their meal in the Cafeteria. The Kitchen Staff is still using this recipe today, and it has also been shared with the Staff at Community Care Nursing Home.


INGREDIENTS:
1 cake fresh yeast 2 tbs shortening
scald 3/4 cup milk, cool to lukewarm 1 egg
1/4 cup sugar 3 cups flour
1 tsp salt  

DIRECTIONS:

Dissolve yeast in 1/4 cup warm water. Mix dissolved yeast with milk, sugar, salt, shortening, egg, and flour. After thoroughly mixed, use a little flour to work up well on board. Place in greased bowl and let rise until doubled in bulk. Knead and shape into rolls. Let rise again. Bake at 350 deg F for about 20 minutes. Delicious!!

(Yeast substitute: 1 cake fresh yeast (0.6 oz) = 1 pkg active dry or rapidrise yeast (1/4 oz) = 2-1/4 tsp Fleischmann's bread machine yeast)
