STORY BEHIND THE DISH:

This is a dish that my mother, Ida Schneider Wiemers, made frequently. It seems that when Mama made this salad it was better than when anyone else made it, and we children decided it was the order that she added the ingredients. This is the way we make it at our home, now.


INGREDIENTS:
Cabbage Salad
 
2 cups of raw cabbage shredded or chopped ¼ cup onions, thinly sliced
1 bell pepper sliced thinly or diced ½ cup diced tomatoes
Dressing  
1 Tbs salad oil ¼ tsp salt
1 Tbs apple cider vinegar black pepper
1 tsp sugar  

DIRECTIONS:

Place onions in bottom of bowl and sprinkle with sugar, salt, pepper and oil and let this marinate while preparing the other vegetables. After adding all the remainder of the veggies stir to coat all veggies with the oil. Then add the vinegar and toss again.

This salad can be made with varying amounts of any of the veggies to suit your taste or just to use what is available.
